Mo’s Go-To Beach Sandwich, OMG! Scroll to the end for the recipe!
Heading to a beach rental soon and already dreading the thought of cooking for your kids in someone else's kitchen? We totally get it.
While beach vacations are all about relaxation, figuring out meals can quickly become one of the most stressful parts of the trip. Eating out for every meal isn't always budget-friendly, practical, or enjoyable with young kids. At the same time, cooking in an unfamiliar kitchen—with unfamiliar equipment and a grocery store you've never visited—can feel overwhelming.
Here's a smoother, more conversational version for your blog post:
That’s why I teamed up with my friend Mo from Nourishment by Mo to create this guide to beach meal prep planning.
As a personal chef, cooking coach, and mom, Mo believes that nourishment is at the heart of everyday life. Through delicious, nutritious food and practical guidance, she helps families make healthy eating feel simple, enjoyable, and sustainable. Whether she's teaching cooking skills or preparing meals for busy households, her goal is to take the stress out of mealtime.

Fish or Shrimp Tacos
One of the best ways to enjoy local seafood.
Serve grilled fish or shrimp on tortillas with guacamole, salsa, shredded cabbage, and fresh lime.
Quesadillas
Quick, kid-friendly, and endlessly customizable.
Add leftover protein, vegetables, or beans and serve with a simple side salad.
Beach Lasagna
This has become a beloved tradition in our family.
After a long day in the sun, there's something incredibly comforting about gathering around a homemade lasagna. Assemble it earlier in the day and bake when everyone returns from the beach.
Make this easy for yourself with pre made marinara, your fave noodles and a block of parmesan (bring a microplane which is a great multi use tool).
Fancy Mac and Cheese
Upgrade a family favorite by adding sliced chicken sausage and roasted vegetables.
Easy. Filling. Crowd-pleasing.
Breakfast for Dinner
Frittatas, omelets, pancakes, or scrambled eggs are fast, affordable, and usually require ingredients you already have on hand.
Asian Dumpling Night
Keep frozen dumplings in the freezer for a low-effort dinner.
Pair them with a simple salad, steamed vegetables, or fruit.
Grill Night
One of the easiest vacation meals.
Serve:
Hamburgers
Hot dogs
Grilled vegetables
Fruit salad
Minimal cleanup, maximum enjoyment.
Veggie Burgers with Easy Slaw
A great lighter option after several days of vacation indulgence.
Use pre-made veggie burgers and toss together a simple cabbage slaw with lime juice and olive oil.
Beach Sandie’s
Load them up or keep it simple! Mo’s go to includes ciabatta, prosciutto, salami, deli turkey, havarti, fresh mozzarella, arugula mixed with evoo and lemon, thin sliced shallots, heirloom tomato, pepperoncini, balsamic glaze and basil aioli (make pesto and mix w mayo)
keep it simple!
The goal of beach vacation cooking isn't to create gourmet meals.
It's to spend less time in the kitchen and more time making memories with the people you love, while still also supporting local businesses like fish mongers and farm stands.
A little planning, a few versatile ingredients, and several easy go-to meals can completely transform your vacation experience.
The less time you spend worrying about what's for dinner, the more time you have for sandy toes, sunset walks, family game nights, and the moments that become lifelong memories.
And that's exactly what family travel should be about.
